The tamp is the most ritualized step of home espresso and the least understood. This guide explains why it matters, the correct pressure, leveling, and common mistakes.
Why tamping matters
Tamping compacts the coffee puck so water cannot channel through weak spots. A level, consistent tamp is the difference between an even extraction and a sour-bitter split shot.
Force matters less than consistency — roughly 15-20kg of pressure is standard, and a self-levelling tamper removes the skill ceiling entirely.
The technique
Fill the basket level, tap to settle, then press straight down with a level tamper, finishing with a slight twist to polish. If your grinder produces fluffy grounds, a distribution tool helps more than pressing harder.
Common mistakes
Under-filling the basket (leaves a shallow puck and channeling), over-tamping (rarely the problem), and uneven pressure (fix with a spring-loaded tamper).
