How each geometry grinds

Conical burrs โ€” a cone rotating inside a ring โ€” crush beans in a vertical path, run at low RPM, feed by gravity, and produce a slightly bimodal particle spread: main particles plus more fines. Flat burrs โ€” two parallel discs โ€” shear beans centrifugally at higher RPM into a tighter, more unimodal distribution: fewer fines, fewer boulders.

What that does in the cup

More uniform particles extract more evenly, so flats yield cleaner separation of flavors โ€” the "clarity" reputation is real, and it's why filter-focused grinders like the Fellow Ode Gen 2 use 64mm flats.
