Milk steaming is 20% equipment and 80% a two-phase technique you can learn in a week of mornings. As a trainer I've taught hundreds of baristas this exact sequence.

What you're making

Microfoam: milk with bubbles too small to see โ€” glossy, paint-like, pourable. Not the dry meringue of diner cappuccinos. Microfoam integrates with espresso; foam sits on it like a hat.

Setup

Cold whole milk (or barista oat), filled to just below the pitcher spout's base โ€” it doubles in volume. Purge the wand. Tip position: just off-center, nozzle slightly submerged, pitcher tilted ~15ยฐ.

Phase 1 โ€” Stretching (the first 3โ€“5 seconds)

Lower the pitcher until the wand tip sits at the surface and you hear a gentle tearing paper sound โ€” that's air incorporation. Count "one-thousand-one" to "one-thousand-four" for a latte (a touch longer for cappuccino), then stop adding air by raising the pitcher slightly. All texture is created here, while the milk is still cool; air added to warm milk makes big, doomed bubbles.

Phase 2 โ€” Rolling (until temperature)

Submerge the tip slightly deeper and find the whirlpool โ€” the vortex that drags surface bubbles down and polishes texture. Keep it spinning silently until the pitcher base is just too hot for your bare palm (~140ยฐF; 150ยฐF ceiling). Beyond 160ยฐF milk's sweetness cooks away permanently.

Finish

Purge and wipe the wand immediately. Tap the pitcher on the counter once, swirl until glossy โ€” it should look like wet paint. Pour promptly; microfoam has a two-minute lifespan.

The three classic failures

Big bubbles: air added too late or too violently โ€” stretch earlier, gentler. Thin milk: not enough Phase 1 โ€” count longer. Screaming wand: tip too deep during stretching โ€” raise until the paper-tear returns. Machines with modest steam (Bambino Plus manual mode) just need longer; the phases don't change.
