The problem it solves

Dry coffee compressed in a basket is fragile terrain: hit it instantly with 9 bars and weak spots crack into channels โ€” water highways that over-extract locally while the rest of the puck under-extracts. Channeling is the leading cause of home shots that taste sour and bitter at once.

What pre-infusion does

A few seconds of low-pressure (1โ€“3 bar) water lets the puck swell, settle and seal its own micro-cracks before extraction begins โ€” like wetting sand before building with it. Results, verified on our bottomless portafilter: fewer spritzers, more even flow, a modestly wider forgiveness window for imperfect prep, and gentler treatment of light roasts (which run dense and crack-prone).

Who has it, and in what form

E61 machines (Rocket Appartamento): passive thermosyphon pre-infusion, built into the 1961 design โ€” part of why E61 shots feel forgiving. Modern Brevilles (Bambino Plus, Barista series): programmed low-pressure ramps โ€” real and effective. High-end machines (Linea Micra): adjustable pre-infusion via app โ€” tunable to the coffee. Everything else: a manual approximation โ€” start the pump 2โ€“3 seconds, pause briefly, restart (works on a Gaggia; crude but measurable).

How much does it matter?

Honestly: less than grind quality, freshness, distribution or temperature stability โ€” pre-infusion polishes a good shot rather than rescuing a bad one. If prep is sloppy, WDT will do more than any ramp profile.
