Your cup is 98% water, and water chemistry decides both how coffee extracts and whether your machine survives. The good news: massive improvement takes one cheap step, not a chemistry degree.
What water does to flavor
Minerals aren't passengers โ magnesium and calcium actively grab flavor compounds during extraction. Too-soft water (distilled, heavy RO) under-extracts: flat, sour, lifeless cups, no matter the technique. Too-hard water overshoots into chalky dullness โ and destroys machines. The specialty target (SCA): roughly 50โ175 ppm TDS, moderate hardness, low-ish alkalinity. Most municipal water misses on one side or the other.
Diagnose yours in 60 seconds
White crust on your kettle = hard. Coffee tasting flat despite fresh beans and good technique = possibly too soft or too alkaline. A $10 TDS meter or aquarium test strips give real numbers; your city's water report is free.
Fixes, in ascending effort
Filter pitcher (Brita-class): reduces chlorine and some hardness โ the biggest single upgrade for most homes, $30. Machine filters: Jura/Breville/Philips in-tank filters protect the machine and modestly tune water โ replace on schedule. Blending: hard-water homes can cut tap 50/50 with distilled โ crude, effective, free. Mineral packets (Third Wave Water and kin): dissolve a sachet in a gallon of distilled water for lab-perfect brewing water โ the enthusiast endgame at ~$0.35/gallon, and what we use on the test bench.
The machine-protection angle
Everything above also slows scale โ the #1 espresso machine killer. Softened-enough water can stretch descaling from monthly to nearly never; Jura's filter-first doctrine is built on exactly this. One warning: zero-mineral water (pure distilled/RO) corrodes boilers and confuses sensors โ machines want low-mineral, not no-mineral.
The bottom line
Fresh beans + good grinder + bad water = mediocre coffee, permanently. Filter your water before you upgrade another gadget; it's the cheapest tier on the entire hobby's ladder.
