Grind size is the master variable of coffee โ it sets how fast water extracts flavor โ and every method wants its own. Here's the chart, the feel-test calibrations, and how to translate it to your grinder's numbers.

Pinch-test honestly: rub grounds between fingers and match the texture words. It's crude and it works.
Why size controls everything
Finer grounds expose more surface area, so water extracts faster โ which is why quick methods (espresso: 30 seconds) need fine and slow methods (cold brew: 16 hours) need boulders. Match the grind to the contact time and extraction lands in the sweet zone; mismatch and you get sour (too coarse for the time) or bitter (too fine). Most "bad coffee" is just this table, violated. Calibrating YOUR grinder
Numbers aren't portable โ "setting 15" means nothing across brands โ so calibrate by result: Pour over: aim for total brew 2:30โ3:30; draining faster = go finer, stalling past 4:00 = coarser. Espresso: dial by shot time, 25โ30 seconds to a 1:2 yield. Press: if the plunge fights back, too fine. Log your numbers per method; a hand grinder's clicks or an Encore's dial become a personal lookup table within a week.
When grind can't be fixed
A blade grinder produces every size at once, making this entire chart unusable โ that's the real reason to upgrade. And stale beans grind differently (more fines) than fresh โ another vote for buying recent roasts.
